Oh, Singapore, oh Singapore. How I long to return to my second home! One reason that is compelling, and drawing me further to the Lion City is the gastronomically gratifying memories I’ve had there. One of them, is dining in one of my favorite restos there, called The Paramount.

My friend has this book about restaurants in Singapore, as The Paramount belongs to the top three Chinese restaurants that serve really good dimsum! Imagine how our lives changed when we decided to go and dine in there!

I’d do anything, just about anything to get back inside that lovely resto and feast my heart out!

It’s been a year since I’ve lived in Singapore, and feasted in Singaporean food. Singaporean food has a special place in my heart, as it is very very flavorful, heavily influenced by the Chinese, but fused with so much international cuisines such as Malaysian, Indonesian, and even Indian! Singaporean cuisine is tasty, oozing with flavor, and not to mention, spicy – no limits! Right now, I am reminiscing my food trips there, and let me share to you one of my most memorable lunches in Singapore, dining with my friends at The Paramount.

Reminiscing My Singaporean Life

I remember, a year ago, while I was having the time of my life in Singapore, as I have lived there for 6 months, telling my friends, “ahh, soon, what we have now will be a memory. The moment now, will be a memory later.”

And they became so. Right now, I’m in the Philippines, where I really am supposed to be, and I must admit, I miss traveling. So much.

I miss Singapore alot. My beautiful second home.

In the latter part of 2008, I made a life-changing decision to go ahead and enroll myself in makeup school abroad. I would be living with my friends who are working there, and I’d be away from my family the first time in my whole life. I was scared. I was jittery. But still, I took that courageous step because I felt it was my last hurrah before I entire into adulthood entirely. It was my youth despedida. Yes, would you believe that I am still in denial that I’m a grown up? I am really a child at heart! But you know what I mean – as the years go by and you grow older, the more you become chained to what you’re supposed to do. I was trying to do something special for me, before I get into that stage. I wanted to do something that would give me wonderful memories that I’d look back, when I am older.

Returning to Food Paradise in Angel’s Kitchen

It’s been roughly two years since I’ve returned to Angel’s Kitchen for a second fix. I must admit, I’ve never forgotten on how wonderful the food tasted there, coupled with a really cozy ambience. I was just so happy that the beau was happy to dine me out that night.

Parking proved to be a challenge as the place was packed – it was not as quiet and intimate as before – maybe it gained popularity because of the positive reviews online and through referral, but the food proved to be great, nonetheless!

I went ahead and ordered my favorite, Ostrich Salpicao. (P 378). I was so happy to be able to savour this dish again – a hefty serving of ostrich meat, cooked just like the usual beef salpicao. If you ask me what ostrich meat tasted like – it might as well pass just like beef, for I didn’t taste anything fowl-y about it! Ostrich meat , from my memory, is a far healthier option than the usual meat that we consume, and is definitely lower in fat and cholesterol. Talk about guilty pleasure!

Tips for Passport Renewal at the New DFA Building

Ahh. How I dread going to government offices. I hate it when the time comes that I need to renew stuff. Passport Renewal. Drivers License Renewal. In the Philippines. But then, it’s what I needed to do since I love travelling, and my passport is almost expired – hindering me from leaving the country six months before it expires. So, the ultimate sacrifice happened today, as I spent my morning at the Department of Foreign Affairs building to renew my passport.

Good thing my sister was with me to renew her passport as well, for it would have bored me to tears in being alone. I remember way back, when we applied for passports, we had them done by our trusty travel agency, as we just entered the old DFA facility, signed, and left. It was that easy. But I heard and researched that companions weren’t even permitted inside the DFA main building anymore so paying extra to make it easier wouldn’t really help much. With that, I decided to book my appointment with DFA online. Apparently, DFA’s in sync with technology as they make us book online for our passport application and renewal needs, with the DFA Passport Appointment System.

My appointment was at 10 am, while my sister’s was at 9: 30 am. Silly me for not being able to realize that for every half hour, DFA allows 50 people to make an appointment. I should have just had my sister and I have the same time.

We were pretty early that day, as we arrived at 8:30 am, anticipating crowds of people. Turned out, yes, there was indeed a crowd, so off we start with our adventure!

A Taste of Thailand at Azuthai

While Bangkok, Thailand is still out of the tourists’ must-go places this time because of the political turmoil, my friends and I were craving for good Thai food, so J rounded up the girls and boys to Azuthai, to have a hearty dinner, and more wonderful conversations, as we were sending her off to New York next week. Yes, we’re that supportive. Hahaha!
